1/2 bag of Guacamole PAD 🥑
1 lemon 🍋
5 eggs 🥚
250 ml of agave honey 🍯
140 grams of olive oil 🫒
150 grams of buckwheat flour 🌾
150 grams of rice flour 🍚
50 grams of cornstarch 🌽
18 grams of baking powder 🧁
100 grams of powdered agave syrup 🍬
50 grams of shelled pistachios 🥜
Finely grate the lemon peel, squeeze half of the lemon and filter the juice. Add a few drops of lemon to the avocado pulp and set aside.
Preheat the oven to 180°C (356°F). Whip the egg whites until stiff peaks form and set aside. Beat the egg yolks with agave honey and 125 grams of olive oil.
Add avocado and lemon zest. Incorporate sifted flours with cornstarch and baking powder, mix until a smooth batter forms.
Gently fold in the whipped egg whites. Brush the mold with oil and pour the batter. Bake for 45 minutes.
Sprinkle with powdered agave and distribute pistachios on top.
